A family legendary in Friulian hospitality. A young son reevaluating Friuli’s vinous heritage through the lens of experience with Gravner, Conterno, Dujac, and Roulot. A single traditional variety. A fresh, distinctive voice. That voice, that son is Mitja Sirk. His wine story opens with an extraordinary chapter. At age 11, with Josko Gravner’s encouragement, Mitja made his first wine. Over seven vintages, under the master’s eye, he refined his understanding of Friuli’s past and potential. With time, his focus has narrowed. He now works with one grape — friulano — in a single style. He seeks out old vines, ponca soils, traditional trellising, clean farming. In the cellar, he has moved away from extended skin contact and amphora, towards stainless steel, long lees aging, and batonnage, to make a wine that is, in his words, “very clear and direct.”

This wine is sourced from an 80 year old vineyard in Cormons called "Ca'Cavorgnan", planted to a mere 320 vines. The vines are grown organically on the stony “ponca” soils of compacted sandstone and marl at 75 meters above sea level. This wine was fermented in just two, old barrique where it remained on the full lees for 8 months of elevage, before being bottled and allowed 12 months of resting before release. This is a marked departure in approach from Sirk's Bianco normale, lending a deeper and more textured terroir expression.

Vinous: 93 Points

The 2021 Ca'Savorgnan opens with a spicy blend of dried flowers, ground ginger and freshly sliced pears. Soothingly round and cooling on the palate, this displays floral-laced white pit fruits and raw almond tones as tropical melon hints emerge toward the close. Supremely juicy and fresh, the 2021 finishes long and with a honeyed sensation that keeps the taster looking back to the glass for more.
