Two different estate blocks hand harvested July 31 and Aug 4 at night and sorted into tank all morning. Tanks were filled with CO2 and sealed up for about 2 weeks, forcing fermentation to being inside each whole grape. This carbonic process results in fresh, fruit-forward, easy-drinking wines. Tanks were then opened, and the grapes stomped and fermented on the skins for about a week before pressing. Malolactic fermentation was completed in stainless steel and the wine was bottled on Halloween..
