Kermit discovered Sylvain Fadat right after his first release of 1989, a few years later the Revue du Vin de France declared Fadat, “The Chave of the Languedoc,” catapulting him to almost rock-star status in the French wine world.
Kermit wrote in his newsletter, “Someday when the wines of the Languedoc are better known, the vineyard of Montpeyroux will be rated as one of the best for Syrah and Mourvèdre. Ironically, 20 prime acres of steep hillside with ancient stone terraces under the ruins of an old walled fortress are today not even planted in vines. Sylvain Fadat at Domaine d’Aupilhac would love to add the acreage to his small holdings, but he is too broke to purchase any of it.”
“His 1994 is the sort of wine I find myself calling a dark beauty. It is the biggest, chewiest wine he has produced so far. The aroma is reminiscent of a Côte-Rôtie/Bandol blend. The palate is rich and tannic. I have been aging Fadat’s Montpeyroux beginning with the 1989. It improves with time in the sense that it gains finesse and focus, but those who like it wild and wooly can drink it now.”
Three decades later Sylvain Fadat’s eighteen-hectare lieu-dit of Aupilhac is still making some of the most compelling and age-worthy wines in the south of France. Across the river Hérault from Grange des Pères and Daumas Gassac, his Aupilhac parcel is special for a number of reasons—first the high altitude of 1,200 feet above sea level, being planted on terraces with southwest exposure for both a long hang time and optimal ripeness. Secondly, the soils are rich in prehistoric oyster fossils, giving intensely mineral wines with incredible length.
While his family has farmed these limestone scree terraces since the 19th century, and the vineyards date back to Roman times, the Domaine was not registered as a vigneron indépendent until Sylvain took over in 1989.
