Cook with Verjusfrom William+Chris Vineyards!Verjus (pronounced Vair-JHoo) takes its name from the French 'vert-jus' meaning "green juice". It is a liquid that is high acid, and low sugar made from the pressed un-ripe grapes that winemakers drop from the vine just as the grapes are about to ripen. The grapes sacrificed are done so that the optimum grapes can flourish and then be turned into delicious wine. While acidic, Verjus has a gentler flavor than vinegar, with a sweet-tart taste and sometimes a little earthy, often used to heighten the flavor of many sauces and mustards. Verjus can be used in replacement of vinegar, lemon juice, or red/white wine vinegars in recipes. Check out the one we just got from Texas producer William Chris Vineyards.
