I was pleasantly surprised when Kimberly Paul came into the store to taste me on her new pastis. I had met her when she was working at one of my wife and mines favorite French restaurants Etoile, and one of her cocktails was so outstanding we asked her for the recipe.
When I taste anise spirits like pastis, it is generally a very analytical tasting focused on the details of the spirit because I really do not enjoy them. I just find anise in alcohol off-putting. Imagine my surprise when I actually liked this one. The anise is not so dominant, and it lets many other complex flavors come to the fore. I recommend this one to everyone who likes anise spirits and even those who, like me, normally avoid them. -JEL
